Pick ‘n Save Fresh Every Day Rosemary Mashed Root Vegetables Recipe


Thanksgiving is right around the corner, and the thought of all of those hearty and delicious recipes we are going to be enjoying has my mouth watering already! I wanted to share a recipe with you that my husband and I created as a twist on the traditional mashed potatoes and gravy that we normally see alongside our turkey and dressing. We found a bunch of fresh root vegetables at Pick ‘n Save (my favorite Wisconsin Grocery Store) and couldn’t resist this “mash up” on mashed potatoes!!

What you’ll need:

6 medium red potatoes
4 medium-large parsnips
3 carrots
1 large rutabaga or 2-3 turnips (about 1 1/2 cups)
1 large sweet potato
4 scallions chopped
1 small red onion finely chopped
2 cloves garlic minced
4 tablespoons butter diced
1/2 cup heavy cream
2 teaspoons olive oil
1 teaspoon celery salt
1 teaspoon kosher salt
3 rosemary sprigs (needles finely chopped)
2 tablespoons honey
2 teaspoons paprika
1/4 teaspoon nutmeg
What to do:
Set to boil 6-8 quarts of salted water. Slice carrots, parsnips, potatoes, sweet potatoes, and rutabaga or turnips into about 1/2 inch thick pieces. (This works much faster if you use a mandolin). Drop root vegetables into salted boiling water for no more than 10 mimnutes.
Drain the pot and vegetables into strainer and set veggies aside. Return the pot to low heat and add oil, garlic, and red onion. Sweat till onion is almost translucent then add scallions and rosemary. Sweat 5 more minutes.
While the aromatics are sweating, add the diced butter, paprika, salt, nutmeg, and honey to the veggies and mash with a potato masher until chunky. Return mashed veggies to pot and mix with aromatics. Leave vegetables on low heat until all chunks are soft.
Serve garnished with rosemary.
