These Christmas Tree Mint Meringue Cookies are a super fun treat for Christmas!! If you have a cookie exchange coming up, why not wow them with these adorable trees? The kids are sure to eat them up quick! Here’s the recipe so you can make these yourself!
3 Egg Whites
¼ tsp Cream of Tartar
1 ½ Cup Powdered Sugar
1tsp Mint Extract
Green Gel Food Coloring
Red Sparkle Gel Frosting for ornaments
Preheat oven to 200 Degrees.
Line a cookie sheet with parchment paper or Silpat.
In a large mixing bowl, beat egg whites with cream of tartar until they form soft peaks.
Gradually add in powdered sugar and continue to beat until all sugar is incorporated and form stiff peaks.
Fold in Mint Extract flavoring and Green food coloring, until color is uniform.
Fill a piping bag or sandwich bag with egg white mixture and snip a small hole in the corner for piping.
Pipe a quarter size circle and in a circular motion, build up your mound into a tree-like shape.
Bake at 200 degrees for 2 hours, once 2 hours is up, turn oven off, and allow trees to continue to bake for an additional hour.
Cookies should sound hallow when done.
Use Red Sparkle Gel Frosting to dot cookies for decoration.
