I love baking, but during the hustle and bustle of the holiday season, there is always more baking to do than there is time! We have pies, cakes, and cookies… but don’t forget the fudge! Fudge is one of my favorite holiday treats but seriously I just don’t have time to sit and stir for an hour at the stovetop these days! I really love this microwave recipe that makes the most delicious Rocky Road fudge I have ever had! If you have a few ingredients and a few minutes, you’ll have fudge to enjoy and even give as gifts! Here’s how:
2 cups (12 oz. package) of semi-sweet chocolate chips
1 can (14 oz.) of Sweetened Condensed Milk
1 teaspoon of Vanilla Extract
3 cups of Miniature Marshmallows
1 1/2 cups of Coarsely Chopped Walnuts
LINE 13 x 9-inch baking pan with foil and spray with oil.
MICROWAVE chocolate chips and sweetened condensed milk in large, uncovered, microwave-safe bowl for 1 minute.
STIR. Chocolate chips may not be completely melted yet. If necessary, microwave in additional 15-second intervals, stirring just until chocolate is melted. Stir in vanilla extract. Fold in marshmallows and nuts.
PRESS your mixture into the prepared baking pan. Stick it in the refrigerate until ready to serve.
Lift from pan using the foil. Remove foil and cut into pieces.
